Zucchini Bread

Zucchini Bread

3 cups flour
1 1/2 cups sugar
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tablespoon cinnamon
1/2 cup chopped nuts (opt)

2 cups shredded zucchini
2 eggs
1 cup oil
3/4 cups honey
2 tsp. vanilla

Oven at 350. I use Baking Spray with flour. 2 large loaf pans will yield shorter loaves than 3 smaller pans (I use the disposables).

If you have an abundance of zucchini, shred and measure 2 cups into a zip lock sandwich baggie. Mark 2 c. and freeze. When you thaw for future use, include all liquid!
